Answer
Although the spirit of PowerPivot use is for ad-hoc reporting, you can restrict measures exposed to users.
When you create your PowerPivot model, hide all of the table columns with measures from the PivotTable view. Create a PivotTable and then create the calculated measures that you want to expose to users.

Apesar do espírito do PowerPivot ser a extração de relatórios ad-hoc, você pode restringir as medidas expostas aos usuários.
Quando você cria um modelo PowerPivot, esconda todas as colunas com as medidas da visão da PivotTable. Crie uma PivotTable e então crie as medidas calculadas que você deseja expor aos usuários.
